“Valter Fissore helped revive this nearly extinct Langhe variety in the early 1990s, and advocated to gain DOC status for nascetta, which was granted in 2010. Fissore keeps the juice in contact with the skins for 18-24 hours, lending a golden color to the wine. Its shy initial aromas build into scents of lemon pith and white peach, and the flavors flesh out into green melon and sage, propelled by a saline streak that keeps the wine fresh. This will improve with age, but it’s delicious now if decanted next to roast pork with mostarda.”
