Exclusively coming from the terroir ‘Aux Bouthières’, 0.66 hectares (1.6 acre) deep, with clay, non calcareous, derived from residual clays “with chaille.” The ‘vielles vignes’ of Chardonnay, located at the southern end of Burgundy, are planted between 250 and 500 meters in altitude, higher than the others AOC from Bourgogne. Thus, they provide both maturity and freshness to the wines.

Vintage Report

2016 was an exceptional vintage for Domaine du Roc des Boutires. Yields are low due to spring hail, but there was no effect on the quality of the grapes. The wines are fresh and elegant with a long finish.
- Harvest Date(s): Setember 20 to 26, 2016
- Yields: 20 hectoliters per hectare (1.48 tons per acre)
- Average Yields: Harvest by hand and led to the cuvage in small 30 liters cases

Vinification
-
The berries are driven to the pressoir by gravity, and immediately pressed with the whole bunch in order to filtrate the best and most natural way possible. Once the pressurage is done, the juices are cooled down to 46.4° F (8°C) for 2 days on average in order to make the particles fall in the tank. The cold débourbage enables to preserve the best quality and primary aromas. Malolatic fermenta-tions are happening naturally. Bâtonnages are scarce, while barrels and tanks are used depending on the profile of the vintage.
- Aging: 12 months on “lie fine”, 100% oak aged with 30% new barrels, then 4 months in stainless-steel. French oak from the Allier forests. Medium heated.

Vibrant straw, green-gold hints. Aromas of true complexity: citrus and orchard fruit, lemon, greengage, pear, peach and honey all mineral wrapped with a subtle oak. Linear yet rich. Classic and elegant.

The 2016 Pouilly-Fuissé Aux Bouthières comes from clay-limestone soils, frost in this year reducing the yield by around one-half (20hl/ha). It offers crisp lemon rind, crushed stone and white peach. The palate is full of energy, shrugging off the trauma of the growing season and delivering a satisfying, quite tantalizing mineral-rich finish. If this is a precursor to what the Parinet family intend with the domaine then we are in for a treat. Highly recommended.
