A blend of three of the best parcels from the Moulin-à-Vent property. Strong winds are habitual in the area, blowing routinely on the vines, keeping them dry and leading to smaller, more concentrated berries.
The Thorins is historically the most famous climat of the appellation, and the commune within Moulin-à-Vent, Romanèche-Thorins, was even named in honor of it.

The Couvent des Thorins has a light, slightly earthy aroma; medium body, with smooth, ripe tannins and a flavorful palate of fresh dark fruits. The scent reveals hints of strawberry, spices, and pepper. On the palate, the tannins give structure to the wine, providing enjoyable flavors of red cherry and maintaining a refreshing minty finish.

"The 2023 Moulin-à-Vent Couvent des Thorins is a blend from different lieux-dits. It has an attractive nose with brambly red fruit and undergrowth scents. The palate is medium-bodied with light tannins that frame blackberry and cranberry tones. There's a nice prickle on the tongue toward the finish, thanks to a dash of black pepper. This is lovely."
