Named in honor of a rose garden planted by owner Fabio Sircei’s father for his wife, Adele, Rosé di Adele is more than just a wine; it is a tribute to the family’s history and passion. This wine stands out not only for its delicate and fresh style but also for its connection to the estate’s legacy. The vineyard is situated in the natural isolation created by surrounding durum wheat fields, which have protected the ancient grape varieties for generations. The cryomaceration process, used to make Rosé di Adele, ensures that the wine retains purity and freshness.
As with other Montoni vineyards, Rosé di Adele is cultivated in a natural, high-altitude environment, where the surrounding durum wheat fields create a protective "island." This ensures that the ancient grape varieties are shielded from external influences, allowing them to develop their natural elegance and fine aromas. The vineyard’s high altitude and cool temperatures further help maintain the wine's freshness and finesse.

- The grapes undergo cryomaceration, where they are gently macerated at low temperatures to preserve fresh, aromatic compounds. After maceration, the grapes are softly pressed, and fermentation occurs in cement tanks to preserve the wine's purity. It is then aged sur lie with batonnage in cement containers for 6 months, giving it a rounded texture and complexity without losing its fresh, vibrant character.

The color is light pink “onion skin,” with bronze reflections. Notes of pink rose petal and violets combine with aromas of straw, brine, fennel seeds, blackberries, pomegranate, and strawberries. On the palate, it has a pleasant astringency, a good structure, is fresh, persistent, and sapid.

"An inviting pale salmon pink colour, this rosé is crisp and refreshing, perfect for sipping on a warm summer evening, but it also has enough going for it in terms of body and flavour to accompany a serious meal. There are notes of fresh apricot, peach, a touch of strawberry and some salinity on the nose, which read as delicate cherry, apricot and blanched almond on the palate. Well balanced with lively acidity and a lingering finish."
