Core is the name of the cru from which these exceptional grapes are sourced. In Sicilian, the word "core" translates to "heart," symbolizing the central, vital essence of the vineyard. From above, the vineyard's unique layout resembles the shape of a heart, a natural representation of the passion and dedication that goes into the cultivation of the grapes.
For centuries, the durum wheat fields have contributed to a “natural isolation” of Montoni’s high-altitude vineyards from the rest of the landscape, creating “an island within an island,” where the ancient grape varieties are protected.

- Fermentation takes place in cement containers, with spontaneous malolactic fermentation occurring entirely in cement. The wine is then aged for 12 months in cement, followed by 3 months in barrels and an additional 6 months in the bottle before release.

Ruby red in color with light violet reflections. Notes of prune, red fruit preserves, spices and notes of cocoa and licorice. Fresh, soft and round on the palate with tannins that are typical of this variety, well-polished.
