Produced exclusively from the ‘En Bertilionne’ climat, where Domaine du Roc des Boutires works with a 0.57 hectare plot. 45 year old vines are planted in limestone soils interlaced with marl and chalk on slopes facing East/southeast.

- The grapes are pressed as soon as the harvest arrives at the cellar in Moulin à Vent; the press is filled by gravity. Whole bunch pressing and settling at low temperature (8°C). Slow fermentation at low temperature for about 1 month followed by malolactic fermentation over 6 months. The wine is aged for 15 months in 70% oak barrels and 30% in stainless steel.
