The 2007 Extra-Brut Vintage Celebris is a great example of the house style. Powerful and rich, the 2007 possesses tremendous vinous intensity, buffered by low dosage that gives the wine ts sense if classic austerity. Orchard fruit, apricot, tangerine oil and white flowers develop with a bit of coaxing. The Celebris is a big, broad-shouldered Champagne for the dinner table.

Once again, the nose is very restrained if admirably elegant and pure while revealing cool red berries, especially raspberry and cherry, along with wisps of brioche and pink grapefruit. The graceful yet quite intense flavors are supported by a strikingly refined effervescence that contributes to the overall sense of finesse on the moderately complex and agreeably dry finale. This lovely effort has reached a drink or hold stage
