What’s riddling?

What’s riddling?

"After aging, sparkling wine undergoes a process called riddling. Bottles are placed on special racks that hold them at a 45-degree angle, with the cap pointed down. Once a day (every two days in Champagne), the bottles are given a shake and a turn, alternating right then left before they are dropped back into their cubbies. The drop causes a slight tap, with the angle increasingly moving down and pushing the sediments toward the necks. "Riddling used to be done completely by hand. In recent years, it has been replaced by a gyropalette, because of the high labor costs --...

Celebrate New Year’s Eve with these fine wines

Celebrate New Year’s Eve with these fine wines

"Wine collectors celebrate New Year’s Eve with their very best wines; you can join the fun with these superb selections. "...Bring your New Year’s Eve dinner to a sweet finish with a glass of the 2009 Royal Tokaji Mad Cuvee. This late-harvest wine is named for the Hungarian town of Mad, where Royal Tokaji has its winery and vineyards. Its enticing lime and vanilla scent, and opulent honeyed texture and flavor are underscored with acidity that leaves a clean, dry finish. Its half-bottle format is the perfect size for a small dinner party, too." To read more, click here.

Star/NVV tasting panel: A vintage winemakers are proud to share

Star/NVV tasting panel: A vintage winemakers are proud to share

"At dinner tables around the globe, when a bottle of top Napa Valley cabernet sauvignon is opened, there is often great fanfare; every sip is highly anticipated. "When you gather a group of the winemakers who make these cabernets in a room, however, they might as well be wearing lab coats. In the quick of a sip, a wine is dissected apart until it is barely breathing. It’s what winemakers do: they critique the structure of the wine — the fruit, the alcohol, the acidity, and more, before they’ll shriek 'It’s Alive.' "A funny thing happened, therefore, at the last...

Winery Adventure: Schramsberg Vineyards, Calistoga

Winery Adventure: Schramsberg Vineyards, Calistoga

"There are few tasting experiences, even in the Napa Valley, that rival the one at Calistoga's Schramsberg Vineyards, a historic estate tucked into the densely forested slopes of Diamond Mountain, home to the oldest hillside vineyards in the valley. The Victorian house, the restored barn, the candlelit caves and that world-class bubbly are unparalleled. "Wear comfortable shoes, because the majority of your 75-minute tour will take place on foot. During the tour, a knowledgeable guide shares the rich history of Schramsberg and its 125-year-old caves, which were dug by Chinese laborers in the late 1800s and house as many as...

Wine of the Week: Schramsberg, 2009 Brut Rose

Wine of the Week: Schramsberg, 2009 Brut Rose

"Wine writer Peg Melnik had a blind tasting this week of high-end California sparklers. With the holidays upon us, we searched out the most outstanding sparklers to uncork. Our wine-of-the-week winner is the Schramsberg, 2009 North Coast Brut Rosé. "An irresistible sparkler with a price that makes it a bit more accessible than many high-end sparklers. It's buoyed with crisp acidity and it has a broad reach of flavors. Yeasty, with notes of raspberry, strawberry, a hint of mango and graham cracker. Nice minerality. Bravo." Pairings: Elegant wine fine with chips

Pairings: Elegant wine fine with chips

"Schramsberg 2009 Brut Rosé, our Wine of the Week, is a beauty, with a coy effervescence and a cornucopia of flavors that range from fresh berries to toasted pineapple, with tiny ribbons of mango, papaya and mangosteen and bursts of clove and cardamom punctuating lively, refreshing acidity. It's a wine that makes you sigh 'ahhhhh' as you raise your glass for another sip. "As you would expect from Schramsberg, long one of the finest sparkling-wine houses in the world, this sparkler is suave, sophisticated and elegant, with an appealing subtlety and flawless balance. "One way to think about this wine...

Great Wines and Great Values for Holiday Bubbly

Great Wines and Great Values for Holiday Bubbly

"Bubbly deserves better than four measly weeks a year, I've always said. Americans gorge themselves on sparkling wine in December, but sip it a lot less during the other 11 months. How did it come to that? It's all about New Year's Eve—I get that—but bubbly is not just about celebration, it's the best wine for casual summer drinking, too...It's a drink for every season. "Now that I've been reviewing California sparkling wine for Wine Spectator for the past decade, I can say the wines have never been better. Here is a selection of the top wines:  "...Schramsberg Rosé North...

What Goes Well With Smoked Salmon Salad?

What Goes Well With Smoked Salmon Salad?

"...Try Gainey’s 2012 Limited Selection Sauvignon Blanc. In 2006, in his book 'The Great Wines of America — The Top Forty Vintners, Vineyards, and Vintages,' award-winning author Paul Lukac selected Gainey Vineyard Limited Selection Sauvignon Blanc as one of America’s 40 finest wines. Gainey continues to craft their Limited Selection Sauvignon Blanc in the same winning style and from the same vines in their Home Ranch vineyard. Doing so ensures that they consistently capture this exceptional wine’s quintessential attributes: fresh, vibrant, honeydew melon, white grapefruit, guava and lime aromas — with complementary floral, vanilla, mineral and spice scents — and...
